Eth Restilhè is a self-sufficiency-driven initiative focused on developing the primary sector in the Val d’Aran. A project rooted in direct work on the land: sowing, herding, pruning, protecting… ultimately, respecting and understanding the territory.

Its main objectives include:

  • Producing plant and animal raw materials in an organic and natural way, by bringing currently unused land back into production. This process is largely based on the recovery of local varieties, such as the Bossòst bean, already recovered, recognised and in production.

 

  • Marketing high-quality food products, generating local wealth and offering end consumers artisanally produced food, with full control over the entire process.

 

  • Contributing to the reduction of seasonal dependency in the Val d’Aran economy, strengthening the role of the primary sector as a structural base of the territory.


The creation of a well-maintained, active and self-sufficient landscape is one of the key pillars of the project. An environment that conveys, both to visitors and locals, the image of a worked, productive land capable of sustaining itself beyond reliance on snow.

The recovery of the Pyrenean agro-silvo-pastoral landscape also represents a significant environmental and cultural investment: increased biodiversity, expansion of ecotone areas, recovery of traditional practices and reintroduction of varieties adapted to the territory.

Gourmet d’Occitània is conceived as a guarantee brand bringing together local producers, artisans and retailers under a shared philosophy: artisan products made from locally sourced raw materials, following consistent quality criteria.

All products displayed in this space are available for direct purchase. They can also be ordered through our online shop at www.restilhe.com, and delivered to your home.

Additional considerations

 

  • This space functions simultaneously as a shop, bar, restaurant and meeting area; for this reason, products may have two different prices: one for takeaway and another for on-site consumption.

 

  • Most products are homemade or sourced from local producers; availability depends on several factors, such as seasonality and raw material supply.

 

  • Portions are generous and designed for sharing. If in doubt, please ask the staff — we will be happy to assist and clarify any questions.

 

  • Dishes and sandwiches are intended to be served as described on the menu; any modification will incur an additional charge of 1,50 €
