
Agricultural and Forestry
Era Aif is the agricultural branch of Restilhè, focused on the recovery and active management of the territory in the Val d’Aran.
The project is based on direct work with the land: cultivating, herding, pruning and maintaining the landscape with continuity and purpose.
Rather than a one-off production initiative, it is conceived as a model of a living, productive and self-sufficient territory, capable of generating economic activity beyond the seasonal dependence on snow.
The recovery of the agrosilvopastoral landscape represents a significant environmental and cultural investment:

Increased biodiversity.

Restoration of ecotone areas.

Reactivation of traditional practices.

Enhancement of locally adapted varieties
The objective is to produce plant and animal raw materials through respectful practices, bringing currently unused land back into production.
Plant production is structured in two phases:

Annual crops (first 2–3 years), aimed at generating returns and preparing the land.

Permanent or long-term crops, once the production base is stabilised
The selected varieties are mostly local and well adapted to the altitude and climatic conditions of the area, providing stability and reliability to production.

Own production of plant-based raw materials:
Currently, a significant share of the plant ingredients used across the different projects is produced in the family garden in Garòs, close to the restaurant.

Cabbage, leeks and celery for Olla Aranesa.

Onions for Er Obrador products.

Salads and tomatoes for the different points of consumption.
Recovery of local varieties:

Arres potato (under selection).

Bossòst bean (recovered and recognised as a commercial variety).

Bausen pea (under selection).
-
Vine (white and red, under adaptation).

Apple trees (in collaboration with Aran de Terra and Arantast)
Other projects:
