Raclette (feminine) is a traditional Valaisan dish, which due to its sociable nature has spread to many countries. Traditionally, cheese was melted by bringing it to a heat source such as an oven or embers. Today, it is consumed among friends around an electric grill called a raclette. The cheese is served melted with boiled potatoes or with cold cuts. Raclette cheese obtained the AOC distinction in Switzerland at the end of 2003. This distinction limits the production of raclette to the Valaisan territory and sets precise quantities for its manufacture (quantity and proportions of the ingredients). This AOC has been the subject of controversy in Switzerland, as a significant number of raclette-type cheeses are produced according to other methods in other cantons, although in a way using the fame of the canton to promote themselves.
