Its name comes from the Catalan verb escalivar which means 'to roast the embers' and from the noun caliu , embers, and has its origin in rural communities. It is also called espencat , especially when adding cod. It is a low-calorie, high-fiber dish. Vegetables are roasted, on the grill or in the oven, until cooked. They are left to cool and then peeled and ginned, seasoned and then blunted and subjected to a heat treatment to ensure preservation.
