As the only preservative we use 100% extra virgin olive oil. It is a coupage, Arbequina (30%) and Picual (70%), an extra virgin olive oil with aromas of almonds and green fruit, the leaf with a high fresh flavor and a slight bitter and spicy touch. The aromatic spices that we use are rosemary, oregano, garlic and cayenne in the case of spicy dried tomatoes. We always work the rosemary fresh and no more than three days pass from its collection, where we manage to maintain all its freshness and aroma in our products. Oregano is also harvested in the mountains between late spring and early summer and we work it dry throughout the year where we manage to recover its aromas once it has been packaged and matured for 8 weeks with the rest of the ingredients.
